If you can't, you need to ensure they change the gearbox+clutch+driveshafts (from the lockup they could be damaged) and ask to see photos of the flywheel to make sure there is no damage there. I'm not sure of your local laws but you could reject the car as not fit for purpose. If you know how to drive manuals and are not going everywhere on the rev limiter in 1st gear or changing gears without depressing the clutch then what you described is 100% a manufactung defect. Both of these things are a bad and induce premature wear on the clutch but don't destroy it. Some people "ride the clutch" either by resting their clutch foot on the clutch while driving or by "slipping the clutch" by balancing and "slipping" the clutch when pulling out of junctions, especially uphill.
